🧀🤩!! My one regret (in baked Brie ‘taschen, not in life) was not using more Brie. Even more so than their cookie counterparts, these puff up in the oven and become pretty unrecognizable. But *unlike* hamantaschen cookies, you can, in fact, coax them back into triangle shapes in seconds. So it’s actually not important to keep the filling scant.  Anyway, I love these and I’m making them again next year and every year. If you want to try your hand at them before tomorrow: 2 sheets frozen puff pastry 1-2 tablespoons jam (I used raspberry; fig would be nice, too!) Small (~8 ounce) wheel of brie 1-2 thyme sprigs Egg wash (1 egg + 1 tablespoon water) Flaky sea salt & freshly ground black pepper  1/4 cup coarsely chopped toasted pecans Thaw puff pastry sheets. Preheat oven to 375 degrees F; line two baking sheets with parchment paper. Unfold the puff pastry sheets, roll out just until the lines disappear, then use the rim of a drinking class or a 3 1/2-inch round cookie cutter to cut out rounds. Add a smear of jam to the center of each circle, followed by a few very small cubes or slices of Brie and a sprinkle of fresh thyme. Dip your finger in the egg wash and run it around the edge of each circle. Create triangles by bringing up the edges and pinching to secure (pinch tightly). Place finished hamantaschen on prepared baking sheets and brush exteriors with more egg wash. Season with salt and pepper. Bake 15 minutes. Just a few mins after they’re out of the oven (while they’re still hot), carefully use your fingers along with a dinner knife or offset spatula to re-mold/coax the puffed edges back into true triangles.
