A flavorful roast chicken infused with garlic, rosemary, and lemon, paired with roasted potatoes and seasonal vegetables. Ingredients: - 1 whole chicken (about 4 lbs) - 4 cloves garlic, minced - 2 tablespoons fresh rosemary, chopped - 1 lemon, halved - 3 tablespoons olive oil - Salt and pepper to taste - 4 large potatoes, cut into chunks - 2 cups seasonal vegetables (carrots, zucchini, bell peppers) Instructions: 1. Preheat oven to 425°F (220°C). 2. In a small bowl, mix garlic, rosemary, olive oil, salt, and pepper. 3. Rub the mixture all over the chicken, including inside the cavity. 4. Roast in the preheated oven for about 1 hour and 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and juices run clear. 8.
