COUNTDOWN TO CHEESEMAS DAY 9/12: Whipped feta topped courgette & potato fritters 🧀✨ Ad | Countdown to Cheesemas Day 9 of 12 These are going straight on my party food roster. Crispy courgette and potato fritters, soft in the middle and topped with whipped feta, dill oil and caviar. A proper statement canapé that still feels doable. I grated all the veg using my Zyliss Gourmet Drum Grater which makes prep quick, easy and low mess. You can swap the drums to grate, slice or purée, and it suctions to the counter which is ideal when hosting. The fritters are fried in the Ultimate Pro Ceramic Sauté Pan so there’s plenty of space thanks to the high sides. Perfect for Christmas canapés, drinks before dinner or a New Year’s Eve party. The whipped feta makes more than you need, so keep the extra for spreading on toast or pop it on the side for dipping crisps or bread. Save this for festive hosting. ⭐️ Ingredients: 1 small courgette grated 1 small potato grated 1 tbsp finely chopped onion or shallot 1 tbsp capers chopped 1 tbsp chopped tarragon 1 small egg or 1 egg white 2 to 3 tbsp plain flour Salt Black pepper Neutral oil for frying Whipped feta 100 g feta 1 to 2 heaped tbsp soft cheese Lemon zest Small splash good quality olive oil ⭐️ Dill oil and topping: If you want, blend fresh dill with olive oil and strain. Finish each fritter with whipped feta and a little spoon of caviar. ⭐️ Method: Salt the courgette and soak the potato for 10 to 15 minutes. Drain and squeeze both really well. Mix with the remaining fritter ingredients. Fry spoonfuls until golden and cooked through. Blend the whipped feta until smooth.
