🤤This pav bhaji recipe isn’t the most traditional, but it is how my mom made it growing up: loaded with whatever vegetables we needed to use up in the fridge. It’s one of my favorite refrigerator clean-out meals because almost any vegetable works here. This time I used potatoes, peppers, eggplant, cauliflower, and peas, but I’ve also seen zucchini, sweet potatoes, beets, and more thrown into pav bhaji over the years. Everything gets cooked down into this buttery, spicy, cozy mash that tastes way better than a pile of random vegetables has any right to. And instead of traditional pav, I serve it with buttery King's Hawaiian hamburger buns toasted until golden. The soft, slightly sweet buns with the spicy bhaji?
