@christopherhopkins1: Cajun Chicken with Creamy Parmesan Tortellini Ingredients: 2 lbs chicken breast, sliced into thick strips 2 tablespoons olive oil 8 tablespoons butter, divided 12 cloves garlic, minced, divided 2 teaspoons Cajun seasoning 2 teaspoons smoked paprika, divided 1 teaspoon garlic powder 1 teaspoon onion powder 1½ teaspoons salt, divided 1 teaspoon black pepper, divided 1 lb cheese tortellini 2 cups heavy cream 1 cup whole milk 2 cups shredded mozzarella 1 cup grated Parmesan 4 oz cream cheese, softened 3 tablespoons fresh parsley, chopped Directions: Cook the tortellini in salted water for 7 to 9 minutes, until tender. Drain carefully and set aside. Season the chicken with Cajun seasoning, 1 teaspoon smoked paprika, garlic powder, onion powder, 1 teaspoon salt, and ½ teaspoon black pepper. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 3 minutes per side, until well browned and fully cooked. Reduce the heat to medium and add 4 tablespoons butter with 6 cloves garlic. Turn the chicken through the garlic butter for about 1 minute, then sprinkle with 1 tablespoon parsley. Transfer to a plate and keep warm. Wipe out the skillet and melt the remaining 4 tablespoons butter over medium heat. Add the remaining 6 cloves garlic and 1 teaspoon smoked paprika and stir for about 30 seconds. Pour in the heavy cream and whole milk. Add the cream cheese and stir over medium-low heat until melted. Add the mozzarella and Parmesan in small handfuls, stirring between additions until the sauce becomes thick and creamy. Season with the remaining ½ teaspoon salt and ½ teaspoon black pepper. Gently fold the tortellini into the garlic cheese sauce, taking care not to break the pasta. Spoon the creamy tortellini onto one side of each plate and arrange the Cajun chicken beside it. Finish with the remaining parsley. Cooking Time: 40 minutes | Servings: 7 | Calories: Approximately 686 per serving
