@savory.sweet.empire: Caramelized onion garlic spaghetti 🍝 Ingredients 8–10 oz spaghetti 2 tbsp butter 2 tbsp oil 2 medium yellow onions, finely sliced 3 cloves fresh garlic, minced 1 tbsp all-purpose flour 1 tbsp + 1/2 tsp chili oil (adjust to taste) 1/2 cup chicken stock 1 cup heavy whipping cream 1 tsp Worcestershire sauce 1/2 cup freshly grated Parmesan cheese 1 tbsp freshly chopped parsley Squeeze of fresh lemon juice Seasonings: 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp smoked paprika, 1/2 tsp black pepper, 1/2 tsp red chili flakes, salt to taste Reserved: 1/2 cup pasta water Instructions Bring a large pot of generously salted water to a boil. Cook the spaghetti according to the package directions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside. Heat the butter and oil in a large skillet or sauté pan over medium-low heat. Add the sliced onions and a pinch of salt. Cook slowly for 25–30 minutes, stirring occasionally, until deeply golden, soft, and caramelized. Add the minced garlic and cook for 30–60 seconds until fragrant. Stir in the flour and cook for 1 minute, stirring constantly to remove the raw flour taste. Add the chili oil and cook for another 30 seconds. Pour in the chicken stock, scraping up any browned bits from the bottom of the pan to deglaze it. Let it simmer for 1–2 minutes. Stir in the heavy cream and Worcestershire sauce. Bring to a gentle simmer and cook for 3–4 minutes, stirring occasionally, until the sauce thickens slightly. Whisk in the garlic powder, onion powder, smoked paprika, red chili flakes, and black pepper. Taste and adjust the salt. Add the cooked spaghetti to the pan and toss until evenly coated. If the sauce is too thick, splash in the reserved pasta water a little at a time until it reaches your desired consistency. Stir in the Parmesan cheese until melted and smooth. Finish by mixing in the fresh parsley and a squeeze of lemon juice. Do a final taste test and adjust the salt if necessary.
