Cajun Chicken Spaghetti with Three-Cheese Cream Sauce Ingredients: 12 oz spaghetti 1 lb boneless, skinless chicken breasts, cut into thin strips 2 tbsp olive oil 3 tbsp unsalted butter, divided 4 cloves garlic, minced 1 1/2 tsp Cajun seasoning 1/2 tsp smoked paprika 1/4 tsp crushed red pepper flakes, optional 1/2 tsp kosher salt, plus more for pasta water 1/4 tsp black pepper 1 cup heavy cream 1/2 cup chicken broth 3 oz Velveeta cheese, cubed 1/2 cup shredded mozzarella cheese 1/2 cup finely grated Parmesan cheese 2 oz cream cheese, softened and cubed 1 tsp Dijon mustard 1 tsp fresh lemon juice 1 tbsp chopped fresh parsley Directions: 1. Bring a large pot of generously salted water to a boil. Cook the spaghetti according to package directions until al dente. Reserve 1/2 cup of the pasta water, then drain the spaghetti. 2. While the pasta cooks, season the chicken strips with Cajun seasoning, smoked paprika, salt, and black pepper. 3. Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium-high heat. Add the chicken in an even layer and cook for 6 to 8 minutes, turning occasionally, until browned and cooked through to 165°F. Transfer the chicken to a plate. 4. Reduce the heat to medium-low. Add the remaining 1 tablespoon butter to the skillet, followed by the garlic and crushed red pepper flakes, if using. Cook for about 30 seconds, stirring constantly, until fragrant. 5. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet. Stir in the heavy cream and bring the mixture to a gentle simmer for 2 to 3 minutes. 6. Lower the heat to low. Add the Velveeta, mozzarella, Parmesan, and cream cheese a little at a time, stirring until all cheeses are melted and the sauce is smooth. Stir in the Dijon mustard and lemon juice. 7. Add the drained spaghetti to the skillet and toss until coated in the cheese sauce. Add reserved pasta water, a few tablespoons at a time, if needed to loosen the sauce. 8. Return the cooked chicken and any juices from the plate to the skillet. Toss gently and cook for 1 to 2 minutes, until everything is hot. Garnish with parsley and serve immediately. Cooking Time: 30 minutes | Servings: 4 | Calories: Approximately 930 per serving
