@thecravekitchen1: Birria Grilled Cheese Makes 4 sandwiches Ingredients For the birria: • 2 pounds beef chuck roast, cut into large chunks • Salt and black pepper • 1 tablespoon oil • 3 dried guajillo chiles, stems and seeds removed • 1 dried ancho chile, stem and seeds removed • 2 cups beef broth • 1 can (14.5 ounces) fire-roasted diced tomatoes • 4 garlic cloves • ½ medium onion • 1 tablespoon apple cider vinegar • 1 teaspoon ground cumin • 1 teaspoon dried oregano • ½ teaspoon smoked paprika • ¼ teaspoon ground cinnamon • 2 bay leaves For the sandwiches: • 8 slices thick-cut sourdough or country white bread • 3 cups shredded Oaxaca or mozzarella cheese • 2 cups shredded birria beef, lightly drained • 3 tablespoons softened butter • Reserved birria consommé, for dipping • Diced onion and chopped cilantro, optional Instructions 1. Season the beef generously with salt and pepper. Heat the oil in a Dutch oven or heavy pot over medium-high heat. Brown the beef on every side, then transfer it to a plate. 2. Place the dried chiles in a bowl and cover them with very hot water. Let them soften for 10 minutes, then drain. 3. Blend the softened chiles, beef broth, tomatoes, garlic, onion, vinegar, cumin, oregano, paprika and cinnamon until smooth. 4. Return the beef to the pot. Pour the sauce over it and add the bay leaves. Cover and simmer on low for 3 to 3½ hours, or until the beef pulls apart easily. You can also cook it in a slow cooker on low for 8 hours. 5. Remove and shred the beef. Skim excess fat from the cooking liquid, but reserve the flavorful consommé for dipping. 6. Lightly butter one side of each bread slice. Place four slices butter-side down in a skillet over medium-low heat. Layer each with cheese, shredded birria, a little more cheese and another bread slice, butter-side up. 7. Cook for 3–4 minutes per side, pressing gently, until the bread is crisp and golden and the cheese is completely melted. Keep the heat moderate so the bread doesn’t brown before the cheese melts. 8. Cut each sandwich diagonally and serve immediately with warm consommé.
