Day 2 | 20 Days of 20 Minute Summer Dinners 😋 If you’ve never drizzled a pepperoni pizza with hot honey before you’re in for a treat! Hope you love this one 😄 Chris xx HOT HONEY GARLIC FLATBREAD PIZZAS | Makes 2 INGREDIENTS 80g / 1/4 cup Honey 1 tsp Hot Sauce (I like Frank's or Cholula) 1/2 tsp Chilli Flakes (can adjust to taste) 2x Garlic Flatbreads* 130g / 1/2 cup Pizza Sauce, or as needed (homemade recipe on the blog)** 180g / 2 cups low-moisture Mozzarella, or as needed*** 12 slices Pepperoni, or as needed sliced Black Olives & Fresh Jalapeños (optional) METHOD 1️⃣Preheat the oven to 220C/430F. Keep the oven tray in there so it gets nice and hot (this will help the base of the pizza to crisp up). 2️⃣Combine the honey, hot sauce and chilli flakes in a bowl and warm in the microwave (10-20 seconds or so). Stir then leave to cool. You can also do this on the stove in a small pot (just bring to a simmer then remove & cool). 3️⃣Spread the pizzas with pizza sauce then top with mozzarella, pepperoni, jalapeños and olives (add a few pieces of mozzarella over the pepperoni to prevent it curling). Take the hot tray out of the oven, place the pizzas on then bake them in the oven for 8-10 minutes, or until lightly charring around the edges and golden/bubbly on top. 4️⃣Drizzle with your preferred amount of hot honey (store leftovers) then tuck in and enjoy! *You'll find them in most supermarkets. For reference the flatbreads I typically use from Sainsbury’s are 210g/7.4oz and 24x18cm/9x7

Just use your best judgement to alter the quantities of toppings and time in the oven to suit whichever ones you get. In general, don't swamp the flatbread with loads of toppings otherwise the base might struggle to keep its structure. **If you're getting store-bought just try and get something nice & thick. If it's a little watery consider simmering in a pot to thicken it up (the less excess moisture on top of the pizza the better). Again, don't swamp the flatbread with sauce. ***I freshly grate a block but you can buy pre-grated. If you're using mozzarella in a brine just make sure you thoroughly pat it dry to remove as much moisture as possible.
