This is our butternut squash, leek and gruyere pie, topped with cheesy mashed potato and guaranteed to be a repeat dinner in your house. Serves 4 Takes about an hour (most is oven time) 1/2 large butternut squash (about 700g for a seasonal squash - see notes) 1 large leek, sliced 4 garlic cloves, chopped 60g butter 2 tbsp plain flour 400ml milk for the filling + more for mash 3 large handfuls of spinach 100g gruyere cheese + more to grate on top (or a very mature cheddar) 1 tsp English mustard 2 sprigs of rosemary (optional) Salt Pepper Olive oil 750g potatoes, peeled and halved 1. Heat the oven to 200c. Peel the butternut squash and chop into small cubes. Roast with a drizzle of olive oil and a sprig of rosemary for about 30 mins until softened with a little colour. 2. Meanwhile, make the mash. Boil the peeled and halved potatoes for 15-20 minutes, until totally soft. Mash together and add 40g butter and add milk bit by bit until desired consistency. Season very well. 3. Fry the leeks in a drizzle of oil in a frying pan over medium heat until softened. Add the garlic. Then add in 20g of butter and melt down. Once melted, add the flour and mix for a few minutes then add the milk bit by bit to create a sauce. Add a tsp of mustard, a good seasoning of salt and pepper and then add the spinach here. 4. Keep the oven at 200c. Once the squash is roasted, Add the gruyere and mix together, along with 1 sprig of chopped rosemary. Place into a pie dish, top with mash and more gruyere. Bake for 20-30 minutes until the top is golden. Notes If you are using a seasonal squash, they sometimes have really thick skin. In which case, peeling is tricky. Instead, slice the squash into wedges, place on a tray and into a 200c oven, drizzled lightly with oil, salt and 1 sprig of rosemary. Roast until tender, around 30 minutes. Then when ready to add to the filling, let it cool slightly then scoop it out of the skins (we find this easier than peeling a squash when raw). Add to the leeks in small pieces. Then continue on.
