YES I cook with extra virgin olive oil NO you don’t need some special oil YES it’s safe NO it won’t smoke. Heat your pan on low for a 2-3min add a small amount of oil. And let it heat through evenly. Your oil will change consistency and this is what I want you to focus on. All my followers that have learnt this way actually understand when the pan is ready rather than dropping water- I never ever need to do that. Practice practice practice. In the event the egg stick it’s not a big deal. Remove from pan. Turn heat off and immediately add some water to the pan ( not a lot just enough to coat entire base) It will steam off and perfectly release it. Easy clean up. You can disagree with me that’s ok. I am sure there are many ways. This is my way and has been. Everytime I cook it’s non stick surface. Depending on what I cook, be prepared for your pan to discolour or develop spots. This is normal. Once a week get some pink stuff paste ( you can use bicarb but it will work to certain extent. See my other reels comparing the two) and it will restore it as new! If you are sauteeing things with Asian sauce etc the sides will brown as they have sugar in them! So don’t let it put you off. Also this pan is by Analon.
