@shastawasabi: The day’s wasabi harvest took place in one of Daio Wasabi Farm’s largest greenhouses. It was massive, and very impressive considering it’s built atop a spring water nexus. Structures like this are somewhat common in the Azumino valley as they farm ‘Heichi Shiki,’ or flat land wasabi which offer more climate and pest control. Coverings are very rarely found in Okutama, Ikadaba or other large scale, more mountainous wasabi growing regions in Japan, especially a building this size. Early morning dew is evaporating from the wasabi canopies creating a humid mist. Hot days, cool nights and frigid water keep the plants vibrant. The wasabi we picked were a bit over a year old and are to be be broken down for use and sale in Daio’s markets and restaurants later in the day 🙏 #wasabi #farm #realwasabi #japan #azumino
