RECIPE: https://www.evolvingtable.com/italian-wedding-soup/ Italian Wedding Soup Recipe Meatballs: ½ lb 90/10 ground beef ½ lb mild Italian ground pork sausage ½ cup Italian seasoned breadcrumbs ⅓ cup grated Parmesan cheese 1 large egg, beaten ¼ cup finely chopped fresh flat-leaf parsley 2 garlic cloves, finely minced 1 tsp salt ¼ tsp black pepper 2 Tbsp olive oil, divided Soup: 1 Tbsp olive oil ½ small white onion, diced 3 medium carrots, peeled and diced 3 celery ribs, diced 3 garlic cloves, finely minced 8 cups chicken broth 1 cup acini de pepe pasta ½ tsp salt ¼ tsp black pepper ¼ tsp red pepper flakes (optional) 3 cups fresh baby spinach, roughly chopped Fresh flat-leaf parsley, chopped (optional) Combine the ground beef, sausage, breadcrumbs, Parmesan, egg, parsley, garlic, salt, and pepper in a large bowl and mix well. Scoop 2 teaspoons at a time and roll into meatballs (about 48 total). Heat 1 Tbsp olive oil in a Dutch oven over medium heat. Add half the meatballs and cook 4-5 minutes, stirring often, until lightly browned on all sides. Transfer to a paper towel-lined plate and repeat with the remaining oil and meatballs. Add 1 Tbsp olive oil to the same pot. Stir in the onion, carrots, and celery and cook 3-4 minutes until tender. Add the garlic and cook 30 seconds until fragrant. Pour in the broth, scraping the bottom of the pot to loosen the browned bits, and bring to a boil over high heat. Gradually add the pasta while stirring so it doesn't clump. Mix in the salt, black pepper, red pepper flakes, and meatballs. Cover, reduce heat to medium, and simmer 7-9 minutes until the pasta is tender. Stir in the spinach and cook 2-3 minutes until wilted. Serve with extra red pepper flakes and parsley if you'd like.
