@maryc.129: FILM TO TABLE SERIES EP 60: Cress Soup from The Witches (1990) 🧙‍♀️🐭 Ingredients (adapted from Julia Child’s potage au cresson recipe) * 2 Tbsp unsalted butter * 1 lb (454 g) leeks — about 3 cups sliced, white + pale green parts * 1 lb (454 g) Yukon Gold potatoes — about 3-4 medium, peeled and diced * 5 cups low-sodium chicken stock * 1 small bay leaf * 1 tsp fine sea salt, plus more to taste * 3 oz (85 g) fresh watercress, thick stems removed * ½ cup (120 ml) heavy cream * pepper, to taste Instructions 1. Sweat the leeks. Melt the butter in the Dutch oven over medium-low heat. Add the washed and sliced leeks with a small pinch of the salt. Cook for 8–10 minutes, stirring occasionally, until very soft and sweet. Don’t let them brown—we want to keep the soup pale. 2. Add the potatoes, chicken stock, bay leaf and remaining salt. Bring just to a boil, then reduce to a gentle simmer. Partially cover and cook for 30–35 minutes, until the potatoes are completely tender. 3. Add the cress. Remove the bay leaf. Add 3 oz watercress and simmer for just 5 minutes. 4. Blend until silky. Blend until completely smooth. 5. Strain. Pass the soup through a fine-mesh sieve back into the Dutch oven. 6. Place over low heat and stir in heavy cream. Don’t bring it to a hard boil. 7. Season with more salt as needed and more pepper to taste #foodfromfilms #soup #Recipe #witches
