Glue them down and then fill them in with wood filler the same color or paint it the same color!

Perhaps glue down the letters, fill with air dry clay, the. seal with polyurethane sealer. It would hold cleaning better than uv resin would

A two part resin wood technically work to do what you’re trying to do however, it might be slippery if they drip water on it also so if you’re gonna do resin, maybe don’t go past the height of the letters maybe stop just before the height of the letters, and then it might be reasonably easy to clean between them still a little bit
