🍽️Day 15 of 30 — The Cooking Marathon Continues! 🇭🇹 Halfway through this marathon, and today’s dish is a special one: Lalo (jute leaves), paired with black bean sauce (sòs pwa) and white rice. Lalo comes from the north of Haiti, especially the Gonaïves region, where it’s a real specialty. I didn’t grow up eating it. I actually had it for the first time before I moved to the United States, and I fell in love instantly. It’s a popular dish, but not one people make often because it takes real time and patience to get right. Fresh jute leaves can also be hard to find, so today I compromised with dried leaves and honestly, it still came out perfect. Since I’m a seafood lover through and through, I made mine with crab and shrimp instead of meat. And even though lalo is traditionally eaten with plain white rice, I couldn’t resist pairing it with black bean sauce too. 🛒 Ingredients: Dried jute leaves (lalo), olive oil, epis, garlic, seasoning of choice, crab, shrimp, frozen spinach, white rice, black beans, Maggi bouillon, garlic powder, onion powder.  How it came together: ✨ Soaked the dried jute leaves overnight (or slow-cooked up to 12 hours) until fully softened ✨ Drained the leaves, reserving the soaking water on the side ✨ Heated olive oil in a pan, added epis, garlic, and seasoning ✨ Added the crab and shrimp and let it cook through ✨ Added the softened jute leaves on top, then poured in the reserved lalo water and let it cook down ✨ Added extra olive oil throughout, this dish needs it to finish properly ✨ Stirred in frozen spinach for extra green color since I didn’t have fresh leaves ✨ For the rice: sautéed garlic in olive oil, added salt and water, then cooked as normal white rice ✨ For the sòs pwa: boiled black beans, blended with the cooking water, strained, then seasoned with Maggi bouillon, garlic powder, and onion powder to taste Served hot, all together on one plate.
