For the almond milk • 200 g raw almonds, about 1⅓ cups • 500 ml water, about 2 cups + 2 tbsp • 2 pitted dates • Small pinch of salt For the cookies • Almond pulp left after straining the milk • 1 ripe banana • 1 large egg • Melted dark chocolate, optional for dipping Method 1. Cover the almonds with water and leave them to soak until softened. Drain well. 2. Transfer the soaked almonds to a blender. Add 500 ml fresh water, the dates and salt, then blend until completely smooth. 3. Pour the mixture through a nut-milk bag or fine cloth and squeeze firmly to extract as much milk as possible. Chill the almond milk in a sealed bottle. 4. Keep the almond pulp and squeeze out any remaining moisture. A drier pulp will make the cookies much easier to shape. 5.
