@bigbamwolf: Layering Combo Day 84: Cerveza Rosa + Creme Brulee Top: The opening is the strangest good idea on this channel so far. Cerveza Rosa leads with an old rose that reads like Portrait of a Lady, then drops into an unmistakable beer and lychee accord, San Miguel Lychee in a bottle, while Creme Brulee answers with warm caramelized sugar cracking under a spoon. Rose, beer and burnt sugar should not work together. They do. Mid: As it settles, the lychee and the custard find each other. Creme Brulee turns rich and creamy in the heart, and it rounds off the sharp edge of the beer note until the whole thing smells less like a dare and more like dessert served somewhere expensive. The rose is still there underneath, keeping it from going full gourmand. Drydown: The drydown is where it earns the pairing. Cerveza Rosa finishes woody, close to Gaiac 10, and Creme Brulee settles into creamy rice pudding over it.
