With winter here, I’m loving cooking in my Greenpan Slow Cooker with dishes like this
Lamb Shank Tagine! The house smell incredible with the aromas and the results are rich nourishing & flavoursome dishes, juicy meat falling off the bone and best of all, it happens effortlessly with the press of a button while you get on with you day, coming home to a perfectly cooked dinner! With Greenpan’s PFAS-free, healthy ceramic non-stick coating for toxin free cooking, there’s no nasties, just maximum flavour + the
removable pan is scratch resistant & dishwasher safe. Happy cooking!
 Ingredients
 3 lamb shanks
 Salt, pepper
 2 tbsp olive oil
 1 brown onion, diced
 3 clove garlic, roughly chopped
 2 tbsp ras el hanout
 2 tbsp tomato paste
 700ml chicken stock
 8 fresh dates
 2 cups cous cous
 Handful coriander, roughly chopped
 1/3 cup toasted, slivered almonds
 1/3 cup pomegranate seeds
 Method
Season Lamb Shanks with salt & pepper.
Set the slow cooker to sauté, add the olive oil and brown the shanks. Remove then add the onion, garlic, ras el hanout to the pan with a pinch of salt. Cook for 2-3 minutes to soften then add the tomato paste, cook through for 1 minute then add the stock and bring to simmer, season lightly and return the shanks to the pan
along with the dates and turn through the stock. Set to slow cook for 4 hours.
Towards the end of cooking when you want to serve, pace the cous cous into a bowl,
pour over boiling water season and cover with a plate to steam for 5 minutes.
Flake the cous cous and stir through the half the coriander, almonds and pomegranate.
Pull the meat from the shanks bones, stir back through the sauce and serve with the
cous cous and remaining almonds, coriander and pomegranate scattered over. #homecooking #dinner #FoodTok #healthyfood
