@misstamchiak: Katong Keah Kee at Marine Parade does a really satisfying oyster omelette. The edges are nicely crisp, while the centre stays soft, eggy and slightly gooey from the starch. Every bite is savoury and full of umami, especially with those really plump, juicy oysters. It is already flavourful enough on its own, but the tangy chilli cuts through the richness nicely.
