@shaynateresetaylor: Welcome to my little corner of Umbria 🌿 It still feels surreal sometimes to look out at this land and know that this is where my olive oil begins. These trees are anywhere from 70 to 200+ years old, growing on land that has never been sprayed with pesticides (which makes them wildly organic). Every year, we harvest the olives here and press them within hours, while they’re incredibly fresh and at their peak. That freshness is a huge part of what gives our extra virgin olive oil its high polyphenol content and that peppery little burn you feel in the back of your throat. Our oil consistently tests at 500+ mg/kg of polyphenols, and every bottle comes entirely from olives grown here on my farm. Nothing blended or sourced from somewhere else. There’s still so much I want to do with this land, and not everything has gone according to plan. Some parts of the farm have had to sit patiently while I figure out what comes next. But the olive trees keep doing their thing. And knowing that the 2026 harvest you’ll eventually have in your kitchen starts right here makes this place even more special to me. 88 acres in the green heart of Italy, hundreds of ancient olive trees, and a farm that is very much still a work in progress.
