This is comfort food at its finest, and once you make it you'll understand why it becomes a staple in so many homes. It's reliable, it's nourishing, and it's absolutely delicious every single time. The ingredients are simple - nothing fancy, nothing you have to hunt down at specialty stores. Just real, wholesome ingredients all put together into one beautiful dinner that comes out of the oven fresh, ready, and hot. The kind of meal that makes everyone gather around the table! If you need a go-to recipe that delivers on taste, nutrition, and satisfaction every single time, this is the one. Ingredients: For the Filling * 1 lb ground beef * 2 Tbsp butter * 1 white onion, diced * 2 medium carrots, finely diced * 2 celery sticks, finely diced * 4 garlic cloves, minced * 2 Tbsp tomato paste * 2 Tbsp flour * 1 cup beef broth * 1 tbsp Worcestershire sauce * 1 tsp Dijon mustard * ½ tsp smoked paprika * ½ tsp dried thyme * 1 bay leaf * 1 cup frozen mixed vegetables * 1 Tbsp fresh parsley, chopped For the Topping * 2.5 lbs Yukon Gold potatoes, peeled and quartered * 4 oz cream cheese, softened * ⅓ cup sour cream * ¼ cup butter * ½ cup sharp cheddar cheese, shredded * ½ tsp garlic powder * ½ tsp salt * Black pepper to taste * Extra cheddar for topping * Fresh parsley for garnish Directions: 1. Start boiling salted water for potatoes. Preheat oven to 375°F. 2. Melt butter in a large skillet over medium-high heat. Add onion, carrots, and celery. Sauté 5-6 minutes until softened. Add ground beef, breaking it up as it cooks. Brown until no pink remains, about 6-8 minutes. Drain out any excess fat 3. Stir in garlic and tomato paste. Cook 1-2 minutes until fragrant. Sprinkle flour over the mixture, stirring constantly for about 1 minute. Pour in beef broth, Worcestershire, and Dijon mustard. Scrape up any brown bits. Add smoked paprika, thyme, bay leaf, salt, and pepper. 4. Let simmer on medium-low for 15-18 minutes, stirring occasionally, until thickened and flavors have melded together. 5. Meanwhile, boil potatoes until fork-tender (about 15-18 minutes). 6. Stir frozen mixed vegetables and fresh parsley into meat mixture. Cook 3-4 minutes. Remove bay leaf. Taste and adjust seasoning. Remove from heat. 7. Drain potatoes well and return to pot. Mash thoroughly until smooth. 8. Add softened cream cheese, sour cream, butter, and garlic powder to the hot potatoes. Mash/whip until smooth and creamy. Stir in milk and shredded cheddar. Mix until ultra-fluffy. Season with salt and pepper to taste. 9. Dollop the mashed potatoes over the filling directly in the dutch skillet. Spread gently to the edges, sealing all the way around. 10. Use a fork to create texture on top. Sprinkle with extra cheddar cheese. 11. Bake uncovered for 25-30 minutes until bubbly around the edges and golden on top. Let rest 10 minutes before serving. Garnish with fresh parsley. #homemaderecipe #madefromscratch #mindfulmothering #lifeofahomemaker #homemade
