starch + water under the right condition does something called gelatinisation . that is why it is used in making medicinal tablets and briquettes as a binder. I believe gum, is a carbon polymer same class as starch

Thats how Corn grits(corn meal) behaves when moist..just that our kids digestive system is not mature enough to digest but its not industrial glue..wheat flour acts like glue hence we use it on manila chats
