what is it with these western (and/or western leaning Asians) Tiktokers and their rotisserie chicken broths? half the juices & collagen from the chicken is already gone during the rotisserie cooking process and you're reusing the dried af bones for soup? Just buy a raw chicken and cook it properly it's seriously not that difficult.

Charing will release the oils and increase aroma and flavors.

Simmering with the lid on also makes it cloudy! Harder to get a clearer broth with a rotisserie chicken too due to it being roasted

you should also bake the onions, or burn them directly over the stove

Cooking bones on a high gets you a milky broth. On low gets you a clear broth!

I think you should leave the shredded chicken on the side vs in broth. So the chicken doesn’t overcook.

Don’t char the bones. Peel, scrape the burnt parts of anything else. You then strain it through a cheese cloth and you’ll have your clear broth. Enjoy!

Air frying the aromatics is an okay substitute, but charring is the best way going forward. The charring adds a smokiness to the broth that compliments the natural smokiness of the black cardamom in a lot of recipes. It also helps colour the broth a little bit. Charring the shallot/ginger also adds a bit of natural sweetness too.
