@itsbreellis: 111 pounds harvest, 55 pounds used over the last 3 months, 15 pounds still storing perfectly, and 40 pounds processed up! I noticed these getting a bit soft and I have some busy weeks ahead so I figured getting these processed would be smart! Now I got some potato prep out of the way! I should have checked my jars. These jars fell off a stack I had ready to be moved and I’m sure there was a knick in the glass I didn’t see. #potatoes #preservingtheharvest #growyourownfood #gardening
If you leave potatoes dry and dirty and store them in a cool and dark place potatoes last for a really long time. Why go to all this trouble?

If you tighten your rings a little less aggressively you'll have less jars break on you while also getting a better seal.
The ring needs to be just barely tight enough to prevent water from coming in and the lid from coming up off the jar when it starts cooling down.
The harder you tighten, the higher pressure you'll have in the jar during the cooking. That's what causes exploding jars.
Also, the higher the pressure inside the jar is during canning, the lower will be the vacuum that keeps the jar closed.
(basically, steam and air escapes during canning, that lowers the amount of air in the jar. the lower the amount of air in the jar, the better the vacuum)

I'd make some soup with the potatoes for the next few days or eat them in other ways because I love potatoes 😅 and then the rest is for the French fries... and if I have to many I'd definitely give some away or prepare something for my extended family/neighbors
