🇻🇳 BÁNH HỎI CUỐN — VIETNAMESE LETTUCE WRAPS 🥬 Bánh hỏi are delicate woven rice vermicelli sheets, and one of my favourite ways to eat them is wrapped up with pork, shrimp, herbs and nước chấm. Think of this as a Vietnamese DIY wrap night! For the platter: • 2 stacks dried bánh hỏi • 1 pork shoulder chop, about 1 inch (2.5 cm) thick • 8–10 large tiger prawns, shell-on • Lettuce • Fresh herbs (mint, cilantro, perilla, etc.) • Vietnamese pickled carrot & daikon • Rice paper, optional Quick scallion oil: • 3–4 green onions, finely sliced • 3 tbsp neutral oil Microwave together about 45–60 sec until fragrant and softened. Easy sambal nước chấm: • 1/4 cup (60 ml) fish sauce • 1/4 cup (60 ml) sugar • 1/2 cup (120 ml) warm water • 3 tbsp vinegar • 1–2 tbsp sambal oelek, to taste Stir until the sugar dissolves. Sambal is my little shortcut because we get chili AND garlic without having to chop either. Adjust with more water, sugar or vinegar to your taste! 1️⃣ Cook the pork + shrimp Bring a pot of water to a boil with a generous pinch of salt and a few slices of crushed ginger. Add the pork first and gently boil/simmer until cooked through, about 12–15 min depending on thickness. Remove and rest before thinly slicing. THEN cook the prawns in the same broth for about 2–4 min, depending on size, just until opaque and cooked through. Pork goes first so the broth gets that beautiful porky flavour without the shrimp taking over. 🦐 2️⃣ Prepare the bánh hỏi Place 2 stacks in a strainer set inside a large bowl. Pour boiling water over until submerged and soak for 1 min 15 sec, then immediately transfer to ice-cold water. Drain well. ⚠️ Different brands vary, so always check your package directions first! Separate into manageable sheets, gently roll them up and arrange on a platter. Spoon the scallion oil over top. 3️⃣ BONUS: QUICK CANH 🥣 DON’T THROW OUT THAT BROTH! After cooking the pork and shrimp, taste and adjust the seasoning. Add 1 bunch washed, chopped spinach and simmer just until wilted. Boom. Instant simple Vietnamese canh to serve alongside dinner. TO EAT: 🥬 Grab a lettuce leaf, add bánh hỏi, pork, shrimp, herbs and pickles, wrap it all up and dunk into that nước chấm.
