Let it cool, then place it in a clean dish towel and squeeze really well to remove all of the excess water. Finely chop the broccoli rabe and place it in a bowl. In a separate bowl, combine the egg, garlic and parsley mixture, breadcrumbs, Pecorino Romano, salt and pepper, and milk. Mix well, then combine it with the chopped broccoli rabe. Roll the mixture into small balls. Make a little dent in the center of each one, add a piece of mozzarella, and close it back up. Once they’re all formed, place them in the refrigerator while you make the cream sauce. Heat a pan and add the butter. Add the garlic and parsley mixture and cook until fragrant. Season with salt and pepper, then add the cream. Let it cook for about a minute, then stir in the Parmesan. Set the sauce aside. Take the broccoli rabe cheese balls out of the refrigerator and fry them until golden brown on all sides. To plate, spoon a little cream sauce onto the bottom of the plate, place the broccoli rabe cheese balls on top, then drizzle more cream sauce over them. Serve and enjoy! ❤️
