Most people assume glucose spikes are about the food. But it might actually be about you. Some people have muscle insulin resistance, where the muscle doesn't respond to insulin properly. Others have a beta cell defect, where insulin doesn't get released from the pancreas the way it should. Others still have hepatic insulin resistance, rooted in the liver. And here's where it gets interesting: using AI to analyze the shape of a glucose curve, Dr. Snyder explains that researchers can now identify which subtype someone falls into. Why does that matter? Because your subtype determines what foods will spike you. Someone with muscle insulin resistance may spike to pasta and potatoes. Someone with a beta cell defect may spike to potatoes too.
