@jstkara: #enchiladas #texmex Chicken Enchiladas 🌮 Ingredients 3–4 chicken breasts, cooked and shredded 1 can green chilies 16 oz sour cream 1 can cream of chicken soup (or your favorite cream soup) 1 medium onion, diced Flour tortillas Enchilada sauce Shredded cheese Directions Make the filling: Mix the shredded chicken, diced onion, green chilies, sour cream, and cream of chicken soup together. Fill the tortillas: Spoon the chicken mixture into each tortilla and roll tightly. Add sauce: Pour a little enchilada sauce into the bottom of a baking dish, then place the rolled enchiladas seam-side down. Top: Pour the remaining enchilada sauce over the enchiladas and sprinkle generously with shredded cheese. Bake: Bake at 350°F for about 1 hour, until hot and bubbly and the cheese is melted.
