Peri Peri Chicken 🌶️🍗 I’m going to apologies up from this video is going to ruin all other peri peri chicken for you 😂 Full recipe below ⬇️  Chicken 🐓  * 1 whole chicken (1.4–1.6kg), spatchcocked * ½ tsp salt * ½ tsp black pepper Peri Peri Sauce 🌶️🫶 * 2 red capsicums, roughly chopped * 2 red onions, roughly chopped * ½ cup (120ml) neutral oil, divided * 1 tsp paprika * 1 tsp smoked paprika * 2 tsp cayenne pepper * 1½ tsp salt * 4 garlic cloves * 2 red chillies, deseeded and halved * 10 dried African bird’s eye chillies * ¼ tsp white pepper * Zest and juice of 1 lemon * ½ tsp dried rosemary * ½ tsp dried oregano * 4 tbsp red wine vinegar 1. Roast the vegetables: Preheat the oven to 180°C. Toss the capsicum, red onion, oil, paprika, smoked paprika, cayenne and salt together on a tray. Roast for 20 minutes. 2. Add the garlic: Add the garlic and fresh chillies to the tray, toss, then roast for another 10 minutes. 3. Blend the sauce: Transfer everything to a blender with the dried bird’s eye chillies, white pepper, lemon zest, lemon juice, rosemary and oregano. Blend until smooth, then add the remaining oil and red wine vinegar and blend again. 4. Prep the chicken: Spatchcock the chicken, season with salt and pepper, then coat generously with the peri peri sauce. Reserve some sauce for basting and serving. For best results, marinate overnight. 5. Cook: Place the chicken skin-side up over the charcoal. Cook with the lid closed for about 45 minutes, basting occasionally, until the thickest part reaches 65°C. 6. Crisp the skin: Flip the chicken skin-side down over the coals for a few minutes until crispy and lightly charred. 7. Rest & serve: Rest for 10 minutes, carve and serve with the reserved peri peri sauce.
