@conniesweets: Hard Candy Peaches These hard candy peaches have a fresh, juicy center with a thin, crunchy candy shell on the outside. The final coating of sugar gives them an extra sweet crunch. Ingredients * 2 cups sugar * ¾ cup water * 2 firm peaches * ½ cup sugar, for coating Instructions Prepare the Candy In a medium saucepan, add 2 cups of sugar and ¾ cup of water. Stir together until combined; the mixture may look slightly cloudy. Place the saucepan over medium-high heat and bring the mixture to a boil. Once it begins boiling, avoid stirring it. Cook the sugar mixture until it reaches 300°F (hard-crack stage) on a candy thermometer. If you don’t have a candy thermometer, watch the sugar carefully. It will begin to develop a very light golden or amber color when it is getting close. Be careful not to let it become too dark or burn. Prepare the Peaches While the candy is cooking, wash and dry the peaches. Cut each peach around the middle and gently twist the two halves apart. Remove the pit. Slice the peaches into round rings. Don’t throw away the slices that don’t naturally have a hole in the center—you can use an apple corer or a small knife to carefully create a hole and turn them into rings. Dry the peaches extremely well. This is very important because any moisture on the peaches can interfere with the candy coating and can cause the hot sugar to splatter. Place the peach rings on paper towels and pat them completely dry. Dip the Peaches Once the candy reaches 300°F, remove it from the heat. Carefully place a toothpick or skewer into a peach ring and dip it completely into the hot candy mixture. Allow the excess candy to drip off, then place the coated peach onto parchment paper. Be extremely careful—the sugar mixture is very hot and can cause serious burns. Continue dipping the remaining peach rings. Sugar Coating Allow the candy coating to set and harden. Once the outside is firm enough to handle, lightly dip or roll each candy-coated peach in the remaining ½ cup of sugar. Let them finish setting on parchment paper.
