Butter, for greasing the baking dish INSTRUCTIONS 1. Grill the Lobster Season the lobster tails with Everything Seafood Seasoning, parsley, garlic, lemon juice, granulated onion, and olive oil. Grill until the lobster meat is opaque and fully cooked. Remove the meat from the shells. Chop into bite-size pieces and set aside. 2. Cook the Shrimp Season the shrimp with Everything Seafood Seasoning, parsley, and garlic. Cook in a skillet until just cooked through. Remove the shrimp and set aside. Do not discard the juices left in the skillet. Save them for the cheese sauce. That liquid is basically free seafood flavor, and throwing it away would be culinary vandalism. 3. Cook the Pasta Boil the cavatappi in salted water until just shy of al dente. Drain and set aside. Do not overcook it since it will continue cooking in the oven. 4. Make the Seafood Cheese Sauce Melt the butter in a large saucepan over medium heat. Add the flour and whisk for about 1–2 minutes to make a roux. Season the roux with Everything Seafood Seasoning. Pour in the reserved shrimp juices and whisk until incorporated. Slowly pour in the heavy cream while whisking. Cook until the sauce begins to thicken. Reduce the heat to low. Gradually add most of the cheddar, Colby Jack, mozzarella, and Gouda, stirring until completely melted and smooth. 5. Build the Mac and Cheese Add the cooked cavatappi to a large mixing bowl. Pour the cheese sauce over the pasta. Fold in the chopped lobster and shrimp. Add some of the reserved shredded cheese and fold everything together until evenly combined. 6.
