@baristainpajamas: Your espresso is only as clean as your machine. Old coffee oils can build up on the shower screen and affect every shot. Backflushing helps, but once a month, remove the screen, soak it in espresso cleaner for 10 minutes, then rinse it well. I also upgraded to an IMS Precision screen for more even water flow.
