we had roasted tomato, potato leek, & a sausage tortellini soup with hot honey grilled cheese. tomato soup is actually easy you don't really need to measure anything, and it can be GF/DF if needed! INGREDIENTS •you can use any ripe tomatoes, and I like to do a mix. I did 5 vine tomatoes + a few others. • 1 large yellow onion • 5 gloves garlic • 1-1.5 cups chicken bone broth (or stock) • 1/2 cup packed basil leaves • olive oil •salt, pepper • thyme (optional) • 1/2 cup Parmesan (optional) • last year I added plain Greek yogurt for creaminess but this year I didn't. both are great!! •preheat oven to 425 • quarter the tomatoes, and cut your onion into chunks • peel 5 garlic cloves •oil a baking sheet and place everything on there •add a generous amount of salt and pepper • optional to add some thyme • bake for ~40 mins • take it out and let it cool before putting in a blender (or you can put into soup pot and use an immersion blender) •when blending I added the basil and parm and blended it right it • place in a soup pot on medium and add the chicken broth. add more salt/pepper to taste. • if you want you could add whatever creaminess you want here (half and half, milk, plain Greek yogurt) but you can also skip that like I did! I served with sour cream and Parmesan in case anyone wanted a dollop on top
