Sri Lankan Gnanakatha Cookies Gnanakatha, also known as Sri Lankan sugar cookies, are a much-loved bakery staple found across Sri Lanka. These simple, buttery cookies are a favourite treat, especially enjoyed with a warm cup of tea in the evening. Made with basic butter cookie ingredients, they are shaped into small cookies and finished with a light coating of sugar before baking. Their buttery texture and sweet, crisp crust make them a timeless Sri Lankan favourite. Ingredients 50g unsalted butter, softened 125g granulated sugar 1 large egg 1 teaspoon vanilla essence 250g all-purpose flour 1 teaspoon baking powder For the sugar coating Water, for dipping 2 tablespoons caster sugar Method Preheat the oven to 180°C and line a baking tray with baking paper. Place the softened butter, sugar, egg and vanilla essence in a large mixing bowl. Beat until smooth, creamy and well combined. Add the flour and baking powder and mix until the ingredients begin to come together. Gently knead just until a soft dough forms. Divide the dough into small portions of approximately 15–17g each. Roll each portion between your palms to form a smooth ball, then gently flatten each one slightly. Place the water in a small bowl and the caster sugar in another. Dip one side only of each cookie lightly into the water, then immediately dip the same side into the caster sugar. Arrange the cookies on the prepared baking tray, leaving a little space between each one. Bake at 180°C for 10–12 minutes, or until lightly golden around the edges and on top. Allow the cookies to cool on the tray for a few minutes before transferring them to a wire rack to cool completely. Makes approximately 18 cookies.
