@itsalisonjo: I cant get enough elderberry fruit leather, so we are trying out all the combinations! I LOVED elderberry and peach but every year I look forward to the plums, because the combination of flavors between plums and elderberry is just perfect👌🏼 Youll see the recipe is very general, the amount of liquid you will need will vary on your baking tray or silicone molds. You can 100% use an oven on its lowest setting, use a lined tray with raised edges and you can make wonderful fruit leather, no dehydrator required. I have the standard silicone mats for a corsi dehydrator (10" x 12"). This will fill one tray, in this video i had some extra liquid so I prepared another tray (it happens). The KEY IS TO TRY TO GET YOUR LIQUID TO BE 1/8" on your baking tray, so adjust recipe to make this happen if needed! Ingredients Approximately 2 cups of plums or other fruit of choice 1/2 cup elderberry syrup Raised baking tray or dehydrator 1. Pit plums and slice and add to a blender 2. Add 1/2 cup elderberry syrup to blender and blend until smooth (Some skins will remain, I promise it doesnt effect texture!) 3. Pour liquid onto silicone tray or a baking tray with raised edges lined with parchment paper or silicone. You want the liquid to be about 1/8", any thinner is too thin and if you get to 1/4" it becomes too thick, hard to dry in the center, and takes a long time. If you dont have enough liquid make more, its worth the time for perfect fruit leather! 4. Dehydrate at a low temp, I do 100 degrees F for 12-24 hours. These took about 18 hours total at 100 degrees. For an oven use the lowest setting possible and check frequently so you dont overcook. Youll eventually learn the time needed for your oven. 5. Remove from trays. Youll know its done because it easily pulls from the tray, if its sticking, its not done. Once its not sticky and can easily peel, remove and slice and roll up. 6. Store in a sealed container at room temperature, they can stick together so use parchment paper if needed. They should last 1-2 if stored in a dark pantry. In the fridge they can last over 3 months!
