@mumsfoodies: Mini Baguettes 🥖 Makes 8 370ml lukewarm water (38-40°C) 7g Instant Yeast 500g Bread or AP flour (min 12% Protien) 10g salt Whisk the water with instant yeast. Add the flour and salt and mix until it becomes a dough. You can use a spatula, spoon or your floured hand. Cover for 5 min to let the dough soften and then fold the dough up and over using a spatula 10-20 times until it looks smooth and supple. Cover 1 hour. With floured hands pull away edges and place on a heavily floured surface. Flour the top and Cut into 8 equalish size pieces. Add parchment paper to a large oven dish ( I rubbed a bit of oil on it) With floured hands flatten each piece. Fold over 1 third then the other third over it. Pull up the last bit and pinch it to seal it up includinf the ends. Place them all on a floured surface. Starting with the one you shaped first gently roll it out into a baguette shape. Place them on your tray sprinkle a little flour. Cover and rest for 20-30 min while your oven heats up to 250C. Add a dish with some water in the bottom to heat up with the oven and create steam. Scoring: Just before baking gently smooth some flour over the top with your hand, Take your SHARPEST knife and rub some oil on it. Hold it at 30° angle and slice deep into the dough diagonally DOWNWARDS. The flour on top and the oiled sharp knife will help with the cuts. Bake for 7 min take out the water out and let the steam out turn the oven down to 230C and bake for another 9-12min till it sounds hollow on the bottom. To freeze do it as soon as they’re cool. Wrap in parchment paper and then into an airtight bag. Defrosts in a few hours. To reheat place in a very hot oven for 1-2 minutes. Enjoy D 🫶 #baguette #bread #breadtok #breadmaking #fromscratch
