No better way to use up 10kg of chickpeas🙂‍↕️ Hummus bil lahme means “hummus with meat”, and it’s such a flavourful and filling dish with minimal steps♥️ Notes: use dry chickpeas. If you like garlic, add 1 clove; I like hummus without it. I don’t add olive oil in the hummus, I drizzle on top when serving🫶🏼 Ingredients HUMMUS: 400g dry chickpeas (2 cups) 1/2 teaspoon baking soda 130g tahini (1/2 cup) 80g fresh lemon juice (1/3 cup), more to taste 1/2 cup of aquafaba (the water from boiling the chickpeas) 1/2 teaspoon salt, more to taste GROUND BEEF: 500g lean ground beef 1 tablespoon ghee 1 medium onion, diced 1/2 teaspoon cumin 1/2 teaspoon cinnamon 1/2 teaspoon coriander powder 1/2 teaspoon turmeric powder Salt and pepper to taste 1/4 teaspoon smoked paprika (optional) 1 tablespoon saffron water (optional) 1/4 cup boiling water Topping: Extra virgin olive oil Fresh parsely Optional: roasted pine nuts Instructions Day 1: Rinse the chickpeas. Soak the chickpeas in some baking soda overnight. Day 2: Drain and rinse well. Simmer the chickpeas for 1 hour. To know if it’s cooked, just squish one chickpea between your fingers; it should be soft and creamy on the inside. Save 1/2 cup of the aquafaba for later. Drain the chickpeas. Add the chickpeas to the blender with tahini, lemon juice, and salt. Blend until smooth. Gradually add the aquafaba water until you reach your desired consistency. Adjust salt to your taste. BEEF: In a saucepan on medium heat, caramelize the onions in ghee. Add the ground beef and cook until browned. Add all the spices and cook for a few more minutes. Add 1/4 cup boiling water and cover for 20 minutes. What is aquafaba? It’s the liquid from cooked chickpeas:) #hummus #middleeasternfood #homemadefood #MiddleEasternCuisineGuide #lebanesefood
