@beachygardener: I’ll get a random idea in my head and just run with it… like poached eggs on sourdough. But somewhere between motherhood and completely losing track of time, those eggs got a little too cooked. 😂 So… I had to pivot. Luckily, I had some shishito peppers from the garden to make an egg salad toast with a little hot sauce on top. And honestly? The accidental meal did NOT disappoint.🍳🌶️ Sometimes the best recipes are the ones you didn’t actually plan for. Ingredients: 2 hard-boiled eggs, chopped 3 shishito peppers, finely chopped 2–3 tbsp finely diced onion 2 tbsp mayonnaise 2 tbsp crumbled blue cheese 1 slice sourdough bread Hot sauce, for drizzling Salt, black pepper, garlic powder 1 tbsp EVOO for sautéing the veggies Instructions: Finely dice the peppers and onion. Quickly sauté the veggies until softened. The supposed poached eggs become hard boiled 😂 Smash the eggs and mixed with the cooked/cooled shishitos & onion. Stir in the mayo and blue cheese. Season with salt pepper garlic powder. Toast and butter your sour dough slice. Generously pile the egg salad over the toast.
