I have been canning for long over 40 years I would not pitch. Lots of tomato stuff you can have separation. Are you using a good paste tomato? Like Amish paste or San marzano?

Hi Grandma here...Canning since 1976. Shake it. As long as you timed it correctly it will be perfectly safe. When you make your next beautiful batch cook it down a bit longer. You're doing great!

Hi there. I’m an experienced canner. This liquid separation is common with tomatoes. I’ll attach an explanation from Bernardin home canning. As for the bubbles, I wouldn’t be concerned if that were one of my jars. After my jars have cooled for 24 hours, I actually shake up my tomatoes to redistribute the solids into the liquids. There always air left in the jar from our headspace so when food like tomatoes get processed for longer periods of time, that air is going to be bounced around inside the jar as food is expanding, as gases are escaping etc. If you seal is tight, you’ve done all your checks and are satisfied with the seal, I don’t think I would throw mine out if I were in your situation. You could always store them in the fridge if you’re worried, you could open them, reheat your sauce and reprocess them as well so that you’re not throwing away food.

I am a Grammie. Been canning for 50 years. This is perfectly fine. It separates no matter how tight you pack the jar. Girl you are fine. I promise.

U should have added a bit of baking soda to counter react with the acidity in tomato’s!

My tomatoes do that every year. My mother u laws do that every year. I’m eating 10 year old home canned tomatoes that looked like that. My only concern…that’s pasta sauce? It’s so thin 🫣. It looks like just basic tomatoes. There are restaurants that sell that tomato water for a premium price. Shake it up and use it but girl, add some tomato paste next time to thicken it up. 100% safe to eat. The bubbles are from the blender aerating and now coming back out.

They’re fine. The water has separated from the flesh. You can thicken the sauce when you open them to eat.

Very normal, happens a lot when canning tomato’s/tomato based products. Also happens when making some concentrates (watermelon lemonade etc) and hot sauces

The separation doesn’t bother me but the bubbles would definitely have given me pause.

It’s fine. Mine always separates too. The pulp part rises to the top, while the liquid settles in the bottom. 😊

It’s fine. Shake it up and once the tomato purée soaks up the water again it should reintegrate itself - as long as it sealed, she’s good!
