Avocados are in the same plant family as latex… If picked before the chemical structure has time to produce a specific chemical for ripening they will feel like rubber. It’s basically a harder form of latex. THIS IS NOT FAKE FOOD!

if you have an avocado that hasn't ripened, put up high on a shelf in your kitchen, it should ripen in about 1-2 days. The heat helps.

avocados are related to latex, they can (not always!) be rubbery when not truly ripe

when avocados are picked too early they lack the natural chemicals that are needed for proper ripening. And avocados can sit for weeks before reaching a grocery store so they pick them under ripe so they last until they’re ready to be bought.

If you’re keeping it in the fridge that slows it down A TON. room temperature until ripe. Also if you want to speed up the process a few days, put it in a paper bag with an apple. The gas apples releases helps it ripen faster
