Solo parenting 4 kids means some days, I just want dinner to be easy and drama free.. This is one of those meals I keep coming back to because I can throw everything into one pot, let the pressure cooker do its thing, and 30 minutes later, dinner is ready. I usually make this with pork belly, but this time I used pork shoulder instead. It’s less fatty, but still tender enough for the kids, so they get more meat instead of ending up with lots of fat .. As for the eggs, My kids LOVE the eggs and can easily eat 3 to 4 each.. so each time I make this dish, the eggs are more than the meat somehow 😆 The gravy with rice is so good that one bowl is never enough either. So whenever I make this, I already know I need extra rice and extra eggs.. Honestly, on a solo parenting day, kids happy means mummy happy.. 4 bellies are fully fed, one less thing to worry about .. Send this to a busy mum you know .. She might need an easy dinner idea too.. 🙌🏽 #mumcommunity #lifeathome #mumlifeunfiltered #simplemealideas #onepotmeal
