Is your restaurant menu losing you $$$?👇🏼 When you hand a customer a menu with 15 different chicken dishes, you are giving them decision fatigue. This is known as the "Paradox of Choice." Overwhelming your guests leads to slower table turnover, lower guest satisfaction, and massive amounts of back-of-house food waste. So, what is the sweet spot? According to cognitive psychology (specifically Miller’s Law, which states our brains can only juggle about 7 pieces of information at once), here is the ideal number of menu items based on your restaurant type: ✅ Quick Service / Fast Food: 6 items per category. Speed is your currency. Fewer options mean faster decisions and shorter lines. ✅ Casual Dining: 7 items per category. This hits the psychological "Goldilocks zone." It offers enough variety for large groups without causing a cognitive traffic jam. ✅ Fine Dining: 7 to 10 items per category. Diners are paying for a curated, masterful experience, not an encyclopedia of food. If you have a bloated menu, fix it today: ❗️ If you have 20 entrees, break them up. Separate "From the Grill" from "House Pastas." Never make a guest compare more than 7 items at a time. ❗️ Use the 80/20 Rule: 20% of your menu items likely generate 80% of your revenue. Find the bottom 20% (low popularity, low profit) and cut them entirely. ❗️ Highlight Your "Stars": Find your most profitable, highly popular dishes and draw the eye to them using strategic layout, negative space, or boxed borders. A smaller, smarter menu is easier to prep, easier to train staff on, and far more profitable.
The side of catering no one sees: The emails, logistics, heavy lifting, sleepless nights, last-minute requests, creative burnout, food waste, cleaning, bookkeeping, and the pressure of making every event perfect. People see the final picture. They don't see everything it took to create it. Follow for more realness behind the scenes of building a business as a freelance chef. I'll also be sharing more of the beautiful side of this industry next- the creativity, the freedom, the incredible people, and all the reasons I love what I do. #catering #chef #berlin
