It's `by heart`, not `by Heart`. - *lies off hand* doesn't make sense. - The word is *lines*, not lies. - The idiom is *offhand* (one word) and it means "without preparation, casually". You could say "Sam quoted the lines offhand" - that would also be grammatically okay, but it means something different: he did it casually without thinking much about it. So: - If you mean he memorized it: *by heart* - If you mean he did it casually: *offhand* The most natural is: *Sam quoted the lines by heart.*
