When I make meatballs I always do a double batch and freeze the extras for future use. Not much extra work but I’m glad to have them later

We love these. Always make double batches and make them a bit smaller. Then freeze. Great weeknight meal when you just have do the risoni and cook the meatballs in the air fryer

I only use chicken breast and blitz it in the food processor, that way I know what meat I’m getting. I then place the mixture in a ziplock bag as I don’t have the freezer space to roll them. But this meal is always on my rotation
