Apple Cider Coffee Cake Pan: 9-inch square metal pan Oven: 350°F Yield: 9 generous pieces Apple Cider Coffee Cake * 250g unsalted butter, softened * 165g granulated sugar * 100g light brown sugar, packed * 3 large eggs * 2 tsp vanilla extract * 300g sour cream * 325g all-purpose flour * 1 packet Alpine Apple Cider Instant Drink Mix * 1½ tsp baking powder * ½ tsp baking soda * ¾ tsp salt * 1½ tsp cinnamon * ½ tsp nutmeg * ¼ tsp allspice Double Crumb Topping * 250g all-purpose flour * 200g light brown sugar, packed * 75g granulated sugar * 2 tsp cinnamon * ½ tsp nutmeg * ¼ tsp allspice * ¼ tsp salt * 175g unsalted butter, melted Instructions 1. If the crumb topping starts browning too quickly, loosely tent the pan with foil for the remainder of the baking time. 3.
