And with mashed potatoes + honey butter carrots? 10/10. 3 T whole peppercorns 3 sprigs rosemary 5 cloves of garlic 1 shallot 4 C Heavy whipping cream Chicken Olive oil Smash the peppercorns. You want them cracked fairly fine, but not ground. Mine were a little too chunky, so I’d smash them more next time. Chop rosemary, garlic, shallots and mix with heavy whipping cream Spatchcock chicken and coat both sides with olive oil, salt, and pepper. Bake the chicken at 375 for 15 minutes Pour the cream sauce over the chicken. Increase temp to 400 and bake for 45 minutes or until done. Baste a few times In the last few minutes I brushed the bigger peppercorns into the sauce. In hindsight I should have smashed a few of them a liiiiiittle bit more. I served with Boursin mashed potatoes and honey butter carrots. Perfect Sunday, cozy, fall dinner for the whole family.
