✨ Tomato Base | صلصة الطماطم ✨ Make a big batch, freeze it, and you’re halfway to basilla, bamya, fasolia, sabanekh and so many of the Egyptian stews we grew up eating. 🍳 Directions 1️⃣ Prep the tomatoes: Cut a shallow X into the bottom of each tomato. Blanch in boiling water for 30–60 seconds, then transfer to ice water. Peel, remove the core + roughly chop. 💡 Choosing tomatoes: Look for deep, even color, a little give when gently pressed + tomatoes that feel heavy for their size. I prefer Roma/plum tomatoes for sauce because they’re fleshier and generally less watery. 💡 Fresh vs. canned: Fresh isn’t automatically better! Use fresh tomatoes when they’re flavorful and in season. If they’re bland or out of season, use canned peeled tomatoes. I use @Cento 2️⃣ Cook the onion in olive oil until softened. Add the tomato paste and cook until it changes from bright red to a deeper brick red. 💡 Easy ratio: 1 tbsp tomato paste per 2 lb tomatoes. 3️⃣ Add the tomatoes + salt. Bring to a bubble over medium heat, then lower to medium-low and simmer uncovered for about 30–45 minutes. 💡 Easy ratio: About 1 tsp salt per 4–5 lb tomatoes. Keep it light since we’ll season the finished dish later. 💡 Don’t add water. Tomatoes release plenty of their own. As that water evaporates, the sauce gets thicker and the flavor becomes more concentrated. 4️⃣ Don’t depend on time alone. Look for a deeper color, the raw tomato smell disappearing, slower + thicker bubbles, and a sauce that begins to coat your spoon. 5️⃣ Once the tomatoes + onions are completely soft, blend until smooth. If it’s still watery, continue cooking uncovered until it reaches the consistency you want. 💡 Remember: Blending gives you the texture. Reduction gives you the concentration. 6️⃣ Cool completely, divide into 1-cup portions + freeze flat. Season further later depending on whatever dish you’re using it for. Learn the base once, make a big batch, and your next five dinners are already halfway done. ❤️ #EgyptianFood #EgyptianCooking #KitchenLiteracy #TomatoBase #DaughtersOfGatherings
