![future wife: nak tomato soup ngan grilled cheese pliss me: okayyy we have em at home! 🍅🧀 go through recipe with me~ [Tomato Soup and Grilled Cheese] 📌note: i loveeee soups, i’m no stranger to tomato soups and grilled cheeses! the cheese pulls? oml. such an elite combo 🍅🧀 This is also a very simple rendition but the taste is very much the same! adapted recipe from senio :) ingredients 📝 [To Roast/ Oven Bake] 3 large tomatoes 2 small onion 3 heads garlic 1 red pepper 1 tsp salt 1 tsp black pepper drizzle of olive oil 1 tsp dried thyme 1 tsp dried basil [Tomato Soup] 1 cup chicken broth 1 tsp black pepper 1 tsp smoked cayenne pepper/chili flakes ½ tsp nutmeg pinch of sugar ¼ cup heavy cream 1/2 cup of shredded parmesan [Grilled Cheese] 1 roasted garlic head (from above) 30g softened butter 2 slices sourdough Sliced mozzarella Sliced cheddar Process 🔪🥘
1) Place halved tomatoes, halved onions, head of garlics (slice the top off), red pepper (cut into planks) onto the metal tray. Season with dried thyme, basil, salt and black pepper. Drizzle well with olive oil. Bake at 200C for 45 mins until softened. 2)Squeeze out 2 roasted garlic and transfer the roasted veggies to a blender. Add the chicken broth, and blend until smooth. 3)Melt the butter in a pot on medium heat. Add cayenne pepper/chili flakes, pepper, nutmeg,a lil sugar and tomato paste. Pour in the blended tomato mixture. Stir well. Add heavy cream, mix and remove from heat. Pour over shredded parmesan and set aside. 4)Mash roasted garlic and butter till it reaches a spreadable paste. Spread over the outside of both slices of bread. Layer with mozzarella and cheddar inside, then toast low and slow until golden brown and perfectly crispy.
