@chefmusti92: Tuna Toast - - - Recipe 👇👇 Ingredients Marinated Tuna • 150 g fresh tuna (sashimi grade), diced • 1 tbsp rice vinegar • 1 tbsp mirin • 1 tbsp sesame oil • 1 tbsp coconut sugar • 3 tbsp soy sauce • 100 ml water • 2 kaffir lime leaves • ½ lemongrass stalk, lightly crushed • 1 pinch bonito flakes • 1 tbsp finely chopped chives Jalapeño Cheese Cream • 100 g cheese (any cheese that melts well) • 100 g heavy cream • 150 g rapeseed oil • 2 jalapeños • 100 g neutral oil (e.g. rapeseed oil) • 2 egg yolks • Lime juice, to taste • Salt Garnish / Sides • Corn tortillas • Oil for frying • Jalapeño, thinly sliced • Chives, finely chopped • Sesame seeds • Lime wedges Method 1. Marinate the Tuna 1. Dice the tuna and place it in a bowl. 2. Bring rice vinegar, mirin, sesame oil, coconut sugar, soy sauce, water, kaffir lime leaves, lemongrass, and bonito flakes to a boil. 3. Simmer for 3 minutes, remove from heat, and allow to cool slightly. 4. Pour the marinade over the tuna and add the chives. 5. Marinate for 10 minutes before serving. 2. Cheese Cream 1. Blend the jalapeños with 100 g neutral oil until completely smooth. Set aside. 2. Melt the cheese and cream in a bowl over a water bath until smooth. 3. Let cool slightly, then add the egg yolks. 4. Blend with an immersion blender while slowly streaming in the jalapeño oil and remaining oil until the cream is smooth and glossy. 5. Season with lime juice and salt to taste. 6. Transfer to a piping bag and refrigerate for at least 30 minutes. 3. Fry the Tortillas 1. Heat oil to approximately 175°C 2. Fry the corn tortillas until golden and crispy. 3. Drain on paper towels. To Serve 1. Pipe the cheese cream onto the fried tortilla. 2. Top with the marinated tuna. 3. Garnish with sliced jalapeño, chives, and sesame seeds. 4. Finish with a squeeze of fresh lime juice.
